Chicken Pad Thai

Freezer Meal Instructions:

Tender chicken breast pieces with a colorful vegetable blend and a Thai-inspired peanut sauce over brown rice pad Thai noodles. Add chopped peanuts, fresh cilantro, and a squeeze of fresh lime to really send it over the top. Like extra heat? Make sure to drizzle a little sriracha overtop. This is one meal that you won’t forget soon!

STOVETOP –

In a small-medium pot, boil water for your pad Thai noodles. When the water is ready boil the noodles for 3-5 minutes until tender but still slightly firm. When done, drain and then rinse with cold water and set aside.

Thaw your chicken/vegetable package in warm water in the sink for best results. Heat 1 TBS of olive oil or your choice of cooking oil in a skillet over medium-high heat. Once heated, carefully add your thawed chicken and vegetables and cook and stir together until chicken is fully cooked and veggies are just browned/soft. Lightly salt and pepper to your liking.

Add reserved noodles to the stir fry mixture along with the thawed Thai Peanut Sauce and heat through on low-medium heat until fully combined. If your peanut sauce thickens more than you like you can add 2-3 TBS of warm water to the stir fry and combine well.

Serve with suggested fresh ingredients and enjoy!
